Basic Saudi Rice


8 ounces long grain rice

4 crushed cardamom pods

1 half finely sliced onion

1 tablespoon tomato paste

1 piece cinnamon stick, broken into approx one half inch pieces

1 garlic clove, crushed

half teaspoon salt

one ounce pine nuts


Place rice in saucepan.

one tablespoon cooking oil.

Place oil in saucepan.

Add rice and onion. Fry gently for about two minutes and allow to cool.

Add enough water so that when you put your finger into the pan and just touch the top of the rice, the water level comes to the first joint of he finger next to your thumb. This works for any volume of rice.

Add remaining ingredients and stir.

Bring to a boil for 12 minutes. Lift lid, stir and immediately reduce heat to a low simmer, put the pot lid on and leave it for 25 minutes, then serve!
