Chocolate Eclair Cake
This chocolate eclair cake recipe has all the delicious flavors of an eclair in a cake! This eclair cake recipe has a cream puff crust, a vanilla cream cheese layer, a whipped cream layer and some chocolate drizzle topping. This delicious chocolate eclair cake recipe looks as good as it tastes. Some of the ingredients you will need for the crust recipe include water, butter, all-purpose flour, and eggs. For the filling recipe, you will need softened cream cheese, instant vanilla pudding, and milk. For the topping of this eclair cake recipe, you will need some Cool Whip, or some homemade whipped cream, some chocolate syrup or a homemade chocolate sauce recipe.
To start preheat the oven to 400 degrees Fahrenheit. Lightly grease a nine by 13-inch glass baking dish. For the eclair crust recipe melts the butter in water and bring to a boil. You then remove the eclair crust from heat and stir in the flour, and mix in one egg at a time, mixing thoroughly with each egg. Then spread the mixture into the pan, and cover the bottom and sides evenly. Make sure not to grease the pan too much. As the mixture is very wet, it won't stay up the sides unless just lightly greased. Then bake for approximately 30 to 40 minutes or until golden brown. You want to make sure not to overcook the crust. When finished remove from the oven and let it cool. Then for the filling recipe, whip the cream cheese in a medium sized bowl. Then in another bowl make the vanilla pudding by beating the pudding mix and the milk for approximately three minutes and then put in the refrigerator to set. You want the pudding to be thick before mixing it with the cream cheese. Then slowly add the pudding to the cream cheese, and mix until there are no lumps. Then let cool in the refrigerator. When the crust is completely cooled, you can pour the filling in. Then top the cake with a layer of cool whip as thick as you want it, and drizzle with some chocolate syrup.
