Eggplant Salad


2 eggplants

1 cucumber

2 tomatoes

1 cup yogurt

1 lemon

50 g feta cheese

1 teaspoon pepper

1 tablespoon salt

2 tablespoons olive oil

1 pomegranate


Clean eggplant and cut it into slices.

Heat olive oil and grill the slices of eggplant that have been seasoned with salt.

Whisk together yogurt,salt, pepper, lemon juice and olive oil.

Spread the roasted eggplant. Add cut cucumber and tomato. Pour the mix of yogurt on the top and add pomegranate and feta cheese.
