Prawn Curry With Coconut


200 g raw prawns

1 onion, minced

4 garlic cloves, minced

1 tablespoon olive oil

2 tablespoons coconut oil

1 tablespoon turmeric

1 teaspoon pepper

1 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon ground cardamom

3 cloves

1 bay leaf

1⁄2 cup flaked coconut

1 cup coconut milk

1 cup water

2 tablespoons coriander, chopped (garnish)


heat olive oil in medium skillet. Add prawns and cook for 5 minutes. Remove the prawns in a bowl.

Add coconut oil, onion and garlic, then cook until softened. Add turmeric, pepper, salt, cinnamon,cloves, bay leaf, cardamom and coconut shreds. Cook for 5 minutes.

Pour over coconut milk and water. Add prawns and leave to simmer for 10 minutes.
